Shaky Bridge Pinot Noir 2011
You can now buy New Zealand's Shaky Bridge's Pinot Noir wine in Singapore! Very nice wine, silky smooth while drinking. That's what really distinguishes it from the junior sibling. And maybe a bit deeper red colour, a more pronounced flavours and a taste that would make your taste buds moan for more. Went great with spicy cheese but we reckon it will pair with anything meaty or charcoal grilled. Reward yourself with a bottle or two!

Tasting notes and food pairing ideas:
The deep purple color of this wine leads in to layers of bramble, thyme, blackberry, black cherry, licorice and hints of cocoa. Spiced vanilla oak and smoky notes complete an enriching sensory experience. Released in April 2013 following 18 months barrel age and 6 months in bottle, the wine is delicious to drink on release in 2013 but will benefit from up to 7 years cellaring.
Very low yields of very high quality Pinot Noir grapes were hand harvested around April 29. They were destemmed and lightly crushed, leaving the juice and skins to cold soak for a period of about 12 days before primary fermentation. Using warm fermentation temperatures the wine was hand plunged and pumped over several times daily. The wine was then racked in to 40% new, 30% first year and 30% second year oak barrels for maturation and malolactic. The wine remained in oak for 14 months prior to bottling. Given the grape quality and intensity of this wine, the use of oak was a departure from our usual 11 month regimen. Finally, the wine was lightly filtered before bottling.
