This refreshing wine shows lime, fennel and floral aromas with a hint of minerals – typical of Wairarapa Sauvignon Blanc, with a weighty palate that flows nicely through to the finish. We love to pair it with seafood and pasta dishes, as well as delicious summer salads.
Whilst this wine is ready to drink now, it can also be enjoyed over the next two years. The fruit for this wine was grown in two Wairarapa vineyards, each with differing soils. One is stony loams, from which this wine is predominantly produced, while the other is hillside clay. This variety provides different flavour profiles, which helps us to increase the complexity of the finished wine. These vines are relatively young, and are cropped at low yield levels to give intensely flavoured grapes.
