Tasting notes and food pairing ideas:
Ripe plum and red berry fruits, with savoury oak char and spice notes. This wine is medium bodied wine with a soft, velvety texture. Fresh berry fruits and oak spice are abundant on the palate and persist on the lengthy finish. Red meat and game dishes such as venison, duck and rare lamb.
Will age well with careful cellaring for 3 - 4 years.Standard trellis with balanced pruning to two canes and vertical shoot positioning. Vines are trimmed closely, well tucked and leaf plucking is minimal. Two vineyard passes of cluster thinning are used to reduce the crop, and ensure evenly ripened and balanced fruit. The season started with a relatively cool and wet spring. However, this was followed by a warm, dry summer with little rainfall. These favourable conditions over the flowering period gave slightly above yields. The dry conditions continued to the end of the season, meaning the fruit could be picked at optimum ripeness and in clean conditions. Grapes were machine or hand harvested in vineyard batches, de-stemmed and lightly pressed to small open-top fermenters. A five to six day cold soak was followed by a rapid fermentation. Some batches were allowed to ferment with indigenous yeast, and some with the selected strains. Fermentations were allowed to peak at 32°C with frequent hand-plunging in the early stage of ferment to wet the cap. The wine was drained off early at around 0°Brix, and the skins pressed very lightly. Heavy pressings were treated separately. The wine was matured in old French Oak barriques for 10 months.
